Chicken Dum Biryani

Chicken – 1/2 kg

Basmati rice – 2 cups

Curd – 1/2 cup

Turmeric powder – 1/4 tsp

Red chili powder – 1 tsp

Green chilies – 5

Onions – 2

Cardamom powder – 1/2 tsp

Cloves – 3

Cardamom – 2

Cinnamon – 1 inch

Caraway seeds (Shahi jeera / Sajira) – 1/4 tsp

Salt to taste

Lemon – 1

Saffron – 1/4 tsp

Ghee / Butter – 1 tbsp

Oil to deep fry onions

Garam masala powder – 1/4 tsp

Water – 3 cups

Coriander leaves – 3 tbsp

Garlic – 2 medium cloves

Ginger – 1 inch


Soak basmati rice in water.Grind green chilies, garlic and ginger into fine paste without adding water.

Slice onions into thin pieces (lengthwise).Take cleaned Chicken pieces into a wide bowl.

Add green chili paste to chicken. Add curd, saffron, turmeric, red chili powder, garam masala powder, cardamom powder, lemon juice and salt.Mix them all well.

Deep fry sliced thin onion pieces till they turn golden brown.

Add half of fried onions to Chicken mix.

Add coriander leaves to Chicken and keep it aside for 15 – 20 minutes.Heat ghee in a pan.Add shahijeera, cloves, cinnamon and cardamom.Add marinated mutton mix.

Stir and cook for 5 minutes on medium flame.Drain and add basmati rice.

Mix them all well and cook for 2- 4 minutes.Add 3 cups of water (adjust water as per the requirement).

Cover the pan and cook till rice is done.sliced lemon, coriander leaves, fried onions.Chicken biryani is ready to serve .
